Infocus Food Safety provides specialist food safety consultancy and training services to the aged care and hospital sector across Australia.
Infocus also works closely with catering companies and five star hotels who seek customised and comprehensive food safety programs and tailored training options.
Melinda Chapman
BEd. MBA. As founding company director, Melinda leads Infocus Food Safety’s food safety consultancy and training services and oversees the company’s food safety management projects. She plays an active research role to continuously improve food safety services and ensure all clients are meeting changing legislative requirements. Melinda also facilitates the development and ongoing management of ISO 22000 Programs for hospitals (Epworth Richmond) hotel clients (Sofitel Melbourne) and a range of catering companies who aim to achieve and maintain a higher level of risk management and certification.
As a pioneer provider and adviser in the development of food safety supervisor training in Victoria, Melinda now regularly advises and assists foodservice businesses across Australia to meet their food safety regulatory and training requirements. She also works with large organisations, such as Spotless, to develop and review food safety program templates that have the flexibility to meet the legislative and business requirements of a wide range of foodservice sectors across Australia and New Zealand. In recent years she has gained skills and experience in successfully building and administering Food Safety Programs via online portals.
With qualifications in business, education, workplace training, HACCP and Safe Quality Food (SQF™) Melinda has developed and facilitated training and professional development programs for Epicure at the MCG, Queensland Health (Hospitals), Allity, Bupa Care Services, Sofitel Melbourne, Krispy Kreme and Environmental Health Australia.
Memberships: Institute of Managers and Leaders, Institute of Hospitality in Healthcare.
Jaclyn Huntley
BHSc. Director. As a public health professional and leading writer and reviewer of our food safety programs for aged care organisations and hospitals, Jaclyn has an intimate knowledge of the food safety training and management requirements for organisations providing food to vulnerable people in Victoria, New South Wales, Queensland, Tasmania and South Australia. With cook-chill expertise and over 14 years’ experience as a food safety consultant, trainer and regulatory food safety auditor (Level 4 – High Risk Food), Jaclyn readily responds to our clients’ technical food safety requests and queries and will always go the ‘extra mile’ to resolve issues they may face. She thoroughly enjoys her training role delivering Food Handler, Food Safety Supervisor and Food Hygiene Refresher courses across Australia. She consistently receives excellent feedback from course participants who enjoy her unique personable approach and entertaining case studies.

Tim Threadgold
With 25 years’ experience as a professional Chef, including 7 years as a Chef Manager in residential aged care, Tim has an in depth understanding of the often challenging environments our clients and students work within. Having taken the initiative to gain qualifications in Food Science and Technology, Food Safety Auditing and Workplace Health and Safety, Tim joined the Infocus team in 2021 where he completed further qualifications in Training and Assessment to formalise his experience as a workplace trainer. As a food safety consultant, internal auditor and trainer, Tim offers our clients valuable and practical food safety advice with a focus on ensuring Food Safety Programs and forms are user-friendly for staff. Tim’s personable and professional approach has resulted in numerous positive and unsolicited testimonials from our clients and students. Tim is a natural ‘problem solver’ and will go the extra mile to assist clients with issues they face relating to food safety, food service and kitchen management.

Simon Berton
BHSc. As company director, Simon guarantees all client services are scheduled and completed to the highest standard. For multi-site aged care organisations, Simon liaises with hospitality and food services managers to ensure their food safety programs achieve corporate consistency whilst being customised for each facility. He provides regular feedback and updates to clients in relation to managing food related risks and changes to legislation. Simon also works with managers and chefs at individual facilities to assist and facilitate the development, implementation and evaluation of food safety policies, programs and procedures. With qualifications in Health Sciences, Training and Assessment and 11 years’ experience as a food safety consultant, Simon is a knowledgeable and respected trainer and consultant to the aged care sector. Simon uses his personable and lively nature to create an engaging learning environment.

Laura Knight
BN. eLearning Manager. With a bachelor’s degree in nursing, food safety qualifications and experience in a range of hospitality, aged care and hospital settings, Laura has direct knowledge of the often-challenging environments that many of our students work and learn in. As a student administrator, Laura is highly skilled in providing clear step-by-step instructions for online students who may require additional technical support to access their course or training certificate. Our organisational clients also appreciate Laura’s timely responses and the extra effort she goes to in preparing requested information, including current and accurate staff training reports. Laura also supports Infocus consultants in the administration of Food Safety Program Reviews, where her initiative and attention to detail is of great value.
